Moroccan Quinoa And Chickpea Salad Recipe


Ingredient


  • 1 cup uncooked quinoa, cooked according to package instructions
  • 2 cups chickpeas, cooked
  • 2 carrots, grated
  • 1/2 cup dates, chopped
  • 1/2 cup pistachios, shelled
  • 1 tsp olive oil
  • 1 T white wine vinegar
  • 2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cumin
  • 1 tsp dried parsley
  • 1 tsp sea salt
  • Pepper, to taste


How To Make


  • In a huge bowl integrate cooked quinoa, chickpeas, grated carrots, dates and pistachios.
